Good news – I (apparently) lost 2 pounds since starting this! Whoo hoo! Not sure if it’s accurate, but I’ll take it!

Nothing really exciting this week… No food for thought (lol). So I guess I’ll just delve right into the meals.

Breakfast

Started out with my usual blue berry chia seed breakfast bowl, but it ended up spoiling on me (boo hoo).

Ate a chocolate chip Clif Bar instead, which was one of the few “healthy” options at the workplace vending machine.

Lunch

Layered eggplant and zucchini casserole, topped with (burned, haha) Italian cheese. Very light, and not bad!

Applesauce bar for dessert.

Dinner

Got tired of minestrone, so made myself some rolled eggs with white rice. Simple yet delicious!

Samyung ramen with 1/2 pack of seasoning and 2 eggs

Ended up being pretty much an Asian food adventure day.

Sloppy lentils on wheat bun, with a side of homemade salt & vinegar chips and pickles

Bok choy & tofu miso soup with rice

Healthy peanut butter milkshake (not featured), made with frozen banana, 1/4 cup PB, and milk
